Instructions

- Add Remaining Milk: Slowly pour in the remaining 1½ cups of milk while running the mixer at a reduced speed. Mix just until combined; the batter will be thin, which is essential for the magic layering effect.
- Whip Egg Whites: In a separate, very clean bowl free of any grease or residue, beat the egg whites on high speed until stiff peaks form. This step is critical to achieve the airy texture of the cake’s top layer.
- Fold in Whipped Egg Whites (Part 1): Gently fold one-third of the whipped egg whites into the batter using a spatula, carefully folding from the bottom so as to not deflate the air trapped in the whites.

- Fold in Remaining Egg Whites (Part 3): Fold in the final third of the egg whites gently, leaving a few small streaks or lumps. The batter should appear light and airy but not overmixed.
