Ingredients

  14. 1/4 cup butter (for caramel)

Instructions

Preheat oven to 350°F (175°C). Grease a 9-inch round or square cake pan.

  1. Mash bananas in a large bowl. Add granulated sugar, brown sugar, eggs, oil (or melted butter), and vanilla; mix until combined.
  2. In another bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  3. Gradually fold dry ingredients into the wet mixture until just combined. Do not overmix.
  4. Stir in chopped walnuts.
  5. Pour batter into prepared pan and bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  6. Meanwhile, prepare caramel by heating brown sugar, butter, and heavy cream in a saucepan. Bring to a boil and simmer 2–3 minutes until slightly thickened. Remove from heat.
  7. Once cake is baked, poke holes in the surface with a skewer or fork. Pour warm caramel sauce evenly over the top.
