Ingredients

1 lb ground beef

1 tablespoon olive oil

1 small onion, diced

1 packet taco seasoning (or homemade)

½ cup salsa

1 cup sour cream

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

½ cup chopped green onions (for garnish)

¼ cup black olives, sliced (optional)

¼ cup chopped tomatoes (optional for garnish)

Fresh cilantro (optional for garnish)


Instructions

  • Preheat the Oven:
    Preheat your oven to 375°F (190°C).

  • Cook the Ground Beef:
    In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened. Add the ground beef and cook, breaking it apart with a spoon, until browned.

  • Season the Beef:
    Stir in the taco seasoning and salsa. Let the mixture simmer for 3-5 minutes to combine the flavors.

  • Assemble the Casserole:
    Transfer the beef mixture to a greased 9×9-inch baking dish. In a separate bowl, mix the sour cream and half of the shredded cheddar cheese. Spread this mixture evenly over the beef.

  • Top with Cheese:
    Sprinkle the remaining shredded cheddar cheese and mozzarella cheese over the top.

  • Bake:
    Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

  • Garnish and Serve:
    Remove from the oven and garnish with chopped green onions, olives, tomatoes, and cilantro, if desired. Serve hot.
