Description

Low-Carb Hot Cereal is a grain-free, keto-friendly breakfast alternative made with seeds, nuts, and low-carb flours. Creamy, filling, and nutrient-dense, it mimics the comforting texture of oatmeal without the carbs.


Ingredients

  • 2 tbsp almond flour
  • 1 tbsp ground flaxseed
  • 1 tsp chia seeds
  • 1 tbsp unsweetened shredded coconut
  • 1 tsp hemp seeds
  • 1 tsp coconut flour
  • 3/4 cup unsweetened almond milk (or other low-carb milk)
  • 1/2 tsp cinnamon
  • 12 tsp sweetener of choice (erythritol, monk fruit, or stevia)
  • Pinch of salt
  • Optional toppings: nuts, seeds, berries, butter, or low-carb syrup

Instructions

  1. In a small saucepan, combine almond flour, flaxseed, chia seeds, coconut, hemp seeds, coconut flour, cinnamon, and salt.
  2. Stir in almond milk and sweetener.
  3. Cook over medium heat, stirring constantly, for 3–5 minutes until thickened.
  4. Remove from heat and let sit for 1–2 minutes so the chia seeds expand.
  5. Transfer to a bowl and add your favorite low-carb toppings.

Notes

  • Adjust milk to reach your preferred consistency.
  • Microwave version: Mix ingredients in a microwave-safe bowl and cook for 1–2 minutes, stirring halfway through.
  • For more protein, stir in protein powder or collagen peptides.
  • To make nut-free, replace almond flour with sunflower seed flour.
