Description

Ingredients

  1. 2 cups heavy cream
    1/2 cup granulated sugar
    1/4 cup freshly squeezed lime juice (about 34 limes)

Instructions

Prepare the Cream Mixture: In a medium saucepan, combine the heavy cream and sugar. Place the pan over medium heat and stir occasionally until the sugar is completely dissolved and the cream begins to simmer. Do not let it boil.

  1. Simmer the Cream: Allow the cream to simmer gently for about 3-5 minutes, then remove from heat. Stir the cream occasionally to make sure it doesn’t scorch.
  2. Add Lime Juice: Once the cream mixture has cooled slightly, add the freshly squeezed lime juice. Stir well. The acidity of the lime will cause the cream to thicken slightly, creating the signature texture of the posset.
  3. Cool and Set: Pour the lime cream mixture into individual serving glasses or ramekins. Allow the posset to cool to room temperature, then refrigerate for at least 3 hours, or until set. The mixture will firm up as it chills.
