Cookie Dough

- 3/4 teaspoon Baking Soda

- 11 ounces White Chocolate Chips (one standard bag)
- 1 cup Milk Chocolate Chips

- Preheat Oven and Cream Butter and Sugars: Preheat your oven to 400°F (200°C). In a large mixing bowl, cream together the cubed butter, brown sugar, and sugar using a mixer for 3-4 minutes until the mixture becomes light and fluffy. Be sure to scrape down the sides of the bowl halfway through to ensure everything is evenly combined.
- Add Eggs and Vanilla: Add the two large eggs and vanilla extract, if using, to the creamed butter and sugar mixture. Mix for about one minute more until the mixture is smooth and creamy.
- Incorporate Dry Ingredients and Chocolate Chips: Gently fold in the unsweetened cocoa powder, all-purpose flour, cornstarch, baking soda, and salt. Stir just until combined to avoid overmixing. Then carefully fold in both the white chocolate chips and the milk chocolate chips.
- Shape Cookie Dough Balls: Using a food scale, portion the dough into 6-ounce balls for uniform cookies. Place each ball onto a light-colored baking sheet. Light-colored sheets are important to prevent cookie bottoms from over-browning.
- Bake and Cool: Bake the cookies in the preheated oven for 9-11 minutes. Once baked, allow the cookies to cool and set on the baking sheet for at least 10 minutes before removing. This helps the cookies firm up and maintain their shape.
