Description

Lemon Poppy Seed Drizzle Cake is a moist and zesty loaf cake speckled with poppy seeds and topped with a tangy lemon drizzle. Perfect for tea time, brunch, or any citrus lover’s dessert table.


Ingredients

  1. 1 1/2 cups all-purpose flour
  2. 1 1/2 tsp baking powder
  3. 1/4 tsp salt
  4. 1/2 cup unsalted butter, softened
  5. 3/4 cup granulated sugar
  6. 2 large eggs
  7. 2 tbsp lemon zest (from about 2 lemons)
  8. 1/4 cup fresh lemon juice
  9. 1/2 cup milk
  10. 1 tbsp poppy seeds
  11. For the drizzle:
  12. 1/2 cup powdered sugar
  13. 23 tbsp fresh lemon juice

Instructions

Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.

  1. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  2. In a large bowl, cream the butter and sugar until light and fluffy.
  3. Beat in eggs one at a time, mixing well after each addition.
  4. Stir in lemon zest and lemon juice.
  5. Mix in the milk until combined.
  6. Gradually add dry ingredients and mix until just combined.
  7. Fold in the poppy seeds evenly.
  8. Pour the batter into the prepared pan and smooth the top.
  9. Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack.
  11. For the drizzle: Mix powdered sugar with lemon juice until smooth and pourable.
  12. While the cake is still slightly warm, poke holes in the top and drizzle with lemon mixture. Allow to soak in and cool completely before serving.

Notes

  1. Use fresh lemon juice for the best flavor.
  2. Cover the top with foil during the last 10–15 minutes if it begins to over-brown.
  3. Let the drizzle soak into the warm cake for extra moisture and tang.
  4. Slices can be frozen individually for quick treats later.
