Description

Lemon Oregano Chicken Kabobs are juicy chicken pieces marinated in zesty lemon juice and fresh oregano, then grilled to perfection. This vibrant Mediterranean-inspired dish is perfect for barbecues, quick dinners, or meal prep.


Ingredients

  1. 2 pounds boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
    1/4 cup fresh lemon juice
    1/4 cup olive oil
    3 cloves garlic, minced
    2 tablespoons fresh oregano, chopped (or 1 tablespoon dried oregano)
    1 teaspoon salt
    1/2 teaspoon freshly ground black pepper
    Wooden or metal skewers, soaked if wooden

Instructions

In a bowl, whisk together lemon juice, olive oil, garlic, oregano, salt, and pepper.

  1. Add chicken cubes to the marinade, tossing to coat evenly.
