Ingredients
- 2 pounds boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
1/4 cup fresh lemon juice
1/4 cup olive oil
3 cloves garlic, minced
2 tablespoons fresh oregano, chopped (or 1 tablespoon dried oregano)
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
Wooden or metal skewers, soaked if wooden
Instructions
In a bowl, whisk together lemon juice, olive oil, garlic, oregano, salt, and pepper.
- Add chicken cubes to the marinade, tossing to coat evenly.
- Cover and refrigerate for at least 1 hour, preferably 2-4 hours.
- Preheat grill to medium-high heat.
- Thread marinated chicken pieces onto skewers.
- Grill kabobs for 10-12 minutes, turning occasionally, until chicken is cooked through and lightly charred.
- Remove from grill and let rest for a few minutes.
