Description

Ingredients

  1. 4 large egg whites
  2. 1/4 tsp cream of tartar
  3. 1 cup granulated sugar
  4. 1 tbsp lemon zest
  5. 1 tbsp fresh lemon juice
  6. 1/2 tsp vanilla extract

Instructions

  1. Preheat oven to 200°F (90°C) and line a baking sheet with parchment paper.
  2. In a clean, dry mixing bowl, beat egg whites with cream of tartar until soft peaks form.
  3. Gradually add sugar, 1 tablespoon at a time, while continuing to beat until stiff peaks form and mixture is glossy.
  4. Gently fold in lemon zest, lemon juice, and vanilla extract.
  5. Using a piping bag or spoon, drop small mounds of meringue onto the prepared baking sheet.
  6. Bake for 1.5 to 2 hours, or until meringues are dry and crisp to the touch.
  7. Turn off oven and let meringues cool completely inside with the door slightly ajar.
  8. Store cooled meringues in an airtight container.
