Description

Lemon Lush is a refreshing, no-bake dessert with layers of buttery graham cracker crust, creamy lemon filling, and a fluffy whipped topping, making it a perfect treat for warm weather or any occasion.

Ingredients

  1. 1 1/2 cups of crushed graham crackers
    1/4 cup of sugar
1/2 cup of unsalted butter (melted)
    8 oz cream cheese (softened)
    1 cup of powdered sugar
    1/2 cup of sour cream
1 small box of instant lemon pudding mix (3.4 oz)
    2 cups of cold milk
8 oz of whipped topping (such as Cool Whip)

Instructions

Make the crust: In a medium bowl, combine the crushed graham crackers, sugar, and melted butter. Stir until the mixture is well combined and resembles wet sand. Press this mixture firmly into the bottom of a 9×13-inch baking dish to form an even crust layer.

  1. Prepare the cream cheese layer: In a separate bowl, beat together the softened cream cheese and powdered sugar until smooth and creamy. Add the sour cream and mix well. Spread this mixture evenly over the graham cracker crust.
  2. Make the lemon layer: In another bowl, whisk together the lemon pudding mix and cold milk until it begins to thicken. Spread the lemon pudding mixture evenly over the cream cheese layer.
  3. Top with whipped cream: Spread the whipped topping evenly over the lemon pudding layer to create the final layer.
  4. Chill and serve: Refrigerate the dessert for at least 3 hours, or until the layers are firm. Slice into squares and serve chilled.

Notes

  • For added flavor, garnish with fresh berries such as strawberries or blueberries.
  • For a different twist, add shredded coconut to the graham cracker crust.
  • You can swap the lemon pudding mix for other flavors like lime, vanilla, or cheesecake.
  • Greek yogurt can be substituted for sour cream for a healthier option with a slightly tangier flavor.
  • Lemon Lush is perfect for making ahead and refrigerating until ready to serve.
  • To avoid a soggy crust, ensure it is pressed down firmly and refrigerated until the layers are set.
