Ingredients

  • 1 whole chicken
  • 1 lemon (sliced)
  • 3 sprigs fresh rosemary
  • 3 sprigs fresh thyme
  • 2 tbsp fresh parsley (chopped)
  • 4 cloves garlic (minced)
  • 2 tbsp olive oil
  • 4 tbsp butter (softened)
  • 1 ½ tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 onion (sliced)

Instructions

  • Preheat & Prepare Chicken – Preheat the oven to 425°F (220°C). Pat the chicken dry.
  • Season the Cavity – Sprinkle salt and pepper inside the cavity and stuff it with lemon slices, rosemary, thyme, parsley, and a few garlic cloves.
  • Make Herb Butter – Mix softened butter with minced garlic, chopped parsley, salt, black pepper, and paprika.
  • Apply Herb Butter – Gently loosen the skin and rub the herb butter underneath for extra moisture and flavor.
  • Season the Surface – Brush the chicken with olive oil, then sprinkle salt, pepper, and paprika evenly.
  • Roast the Chicken – Place the chicken on a roasting rack in a baking dish. Surround it with onion slices and extra lemon wedges. Roast for 1 hour to 1 hour 15 minutes, basting occasionally, until the internal temperature reaches 165°F (75°C).
  • Rest & Serve – Let the chicken rest for 10-15 minutes before carving. Serve and enjoy!
