Ingredients
- 1 whole chicken
 - 1 lemon (sliced)
 - 3 sprigs fresh rosemary
 - 3 sprigs fresh thyme
 - 2 tbsp fresh parsley (chopped)
 - 4 cloves garlic (minced)
 - 2 tbsp olive oil
 - 4 tbsp butter (softened)
 - 1 ½ tsp salt
 - 1 tsp black pepper
 - 1 tsp paprika
 - 1 onion (sliced)
 
Instructions
- Preheat & Prepare Chicken – Preheat the oven to 425°F (220°C). Pat the chicken dry.
 - Season the Cavity – Sprinkle salt and pepper inside the cavity and stuff it with lemon slices, rosemary, thyme, parsley, and a few garlic cloves.
 - Make Herb Butter – Mix softened butter with minced garlic, chopped parsley, salt, black pepper, and paprika.
 - Apply Herb Butter – Gently loosen the skin and rub the herb butter underneath for extra moisture and flavor.
 - Season the Surface – Brush the chicken with olive oil, then sprinkle salt, pepper, and paprika evenly.
 - Roast the Chicken – Place the chicken on a roasting rack in a baking dish. Surround it with onion slices and extra lemon wedges. Roast for 1 hour to 1 hour 15 minutes, basting occasionally, until the internal temperature reaches 165°F (75°C).
 - Rest & Serve – Let the chicken rest for 10-15 minutes before carving. Serve and enjoy!
