Ingredients

6 chicken thighs (bone-in, skin-on or boneless, skinless)

3 cloves garlic, minced

1 lemon (zested and juiced)

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon fresh parsley, chopped (for garnish)


Instructions

  • In a small bowl, combine minced garlic, lemon zest, lemon juice, olive oil, dried thyme, dried oregano, salt, and black pepper to create the marinade.

  • Place the chicken thighs in a resealable plastic bag or shallow dish and pour the marinade over them. Seal or cover and refrigerate for at least 30 minutes (preferably 2-3 hours).

  • Preheat your grill, oven, or skillet to medium-high heat.

  • For skillet cooking: Heat 1 tbsp olive oil in a skillet, add chicken thighs (skin-side down if using skin-on), and cook for 6-8 minutes until golden brown. Flip and cook for another 6-8 minutes, until the internal temperature reaches 165°F.

  • For oven cooking: Preheat oven to 400°F. Place chicken thighs on a baking sheet and bake for 30-35 minutes, or until the internal temperature reaches 165°F.

  • Remove from heat and let rest for a few minutes before serving. Garnish with fresh parsley.
