Description

Ingredients

  • For the crumb base and topping:
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • For the lemon blueberry filling:
  • 2 cups fresh or frozen blueberries
  • 1/3 cup granulated sugar
  • 2 teaspoons cornstarch (3 tsp if using frozen berries)
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line an 8×8 or 9×9-inch baking pan with parchment paper.
  2. In a large bowl, combine flour, granulated sugar, brown sugar, baking powder, and salt.
  3. Cut in the cold cubed butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  4. Mix in the egg and vanilla extract until a crumbly dough forms.
  5. Press about two-thirds of the crumb mixture into the bottom of the prepared pan to form an even crust.
  6. In another bowl, toss blueberries with sugar, cornstarch, lemon zest, and lemon juice until coated.
  7. Spread the blueberry mixture evenly over the crust.
  8. Crumble the remaining dough over the top of the blueberry layer.
  9. Bake for 40–45 minutes, or until the top is golden and the filling is bubbling.
  10. Let cool completely in the pan. For clean cuts, chill in the refrigerator for 1 hour before slicing into bars.
