Ingredients
- 2 cups all-purpose flour (for crust)
- 1/2 cup granulated sugar (for crust)
- 1/4 tsp salt
- 1 cup unsalted butter, cold and cubed
- 4 large eggs
- 1 1/2 cups granulated sugar (for filling)
- 1/4 cup all-purpose flour (for filling)
- 1/2 tsp baking powder
- 2/3 cup fresh lemon juice
- 1 tbsp lemon zest
- Powdered sugar, for dusting
Instructions
Preheat oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper.
- In a bowl, mix 2 cups flour, 1/2 cup sugar, and salt. Cut in the cold butter until mixture resembles coarse crumbs.
- Press mixture evenly into prepared pan. Bake 18–20 minutes, until lightly golden.
- In a separate bowl, whisk eggs, 1 1/2 cups sugar, 1/4 cup flour, baking powder, lemon juice, and lemon zest until smooth.
- Pour filling over hot crust immediately after baking.
- Return to oven and bake 20–25 minutes, until filling is set and center no longer jiggles.
- Cool completely, then refrigerate 1–2 hours before slicing.
- Dust with powdered sugar before serving.
Notes
- For extra tart flavor, increase lemon juice slightly.
- Chill before slicing for cleaner cuts.
- Fresh lemon juice provides the best flavor, but bottled works in a pinch.
- Store refrigerated for freshness; they taste even better the next day.
- Freeze for up to 2 months layered with parchment paper.
