Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1 tablespoon lemon zest
- 1 1/2 cups heavy cream
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/4 cup lemon juice (freshly squeezed)
- 2 tablespoons lemon zest
- 1 1/2 cups fresh blueberries
- 1 tablespoon honey (optional, for drizzling)
Instructions
Make the cake: Preheat oven to 350°F (175°C). Grease and flour an 8×8-inch baking dish. In a bowl, whisk flour, baking powder, and salt. In another bowl, beat butter and sugar until fluffy. Add eggs one at a time, then vanilla extract and lemon zest. Gradually add dry ingredients and milk. Pour into the dish and bake for 20-25 minutes until a toothpick comes out clean. Let cool.
- Prepare the lemon cream filling: Beat heavy cream, powdered sugar, and vanilla until stiff peaks form. Add lemon juice and zest, folding gently to combine.
- Assemble the Soufra: Cut the cooled cake into cubes. Layer in a dish, top with lemon cream, and fresh blueberries. Drizzle honey over if desired.
- Chill and serve: Refrigerate for 2 hours. Garnish with extra blueberries and lemon zest before serving.
Notes
- Use fresh or thawed blueberries. Drain excess liquid if using frozen.
- For a more indulgent dessert, add a layer of crushed graham crackers or vanilla wafers.
- For a no-bake version, omit the cake and layer lemon cream and blueberries.
