Description

This Layered No-Bake Banana Split Cake is a delightful and easy-to-make dessert featuring a graham cracker crust, creamy sweetened cream cheese filling, and layers of fresh bananas, strawberries, crushed pineapple, and whipped topping. Finished with maraschino cherries, optional peanuts, and a chocolate drizzle, it perfectly replicates the flavors of a classic banana split in cake form without baking.

Ingredients

Crust

  • 2 cups graham crackers (about 14 whole graham crackers, cinnamon sugar or plain)
  • ½ cup butter (melted)
  • ½ cup white sugar

Cream Cheese Filling

  • 16 ounces cream cheese (two 8-ounce boxes)
  • 1 cup confectioners’ sugar

Fruit Layers

  • 4 bananas (sliced)
  • 1 ½ cups strawberries (sliced)
  • 15 ounces crushed pineapple (canned, drained)

Topping

  • 8 ounces whipped topping (Cool Whip or store brand, thawed)
  • 15 maraschino cherries (drained)
  • ⅓ cup peanuts (optional topping)
  • ¼ cup chocolate sauce (optional drizzle on top of the dessert)

Instructions

  1. Prepare the Crust: Place the graham crackers in a gallon-size ziplock bag and crush them finely using a rolling pin or your hands. Melt the butter carefully in the microwave. In a medium bowl, combine the graham cracker crumbs, melted butter, and ½ cup sugar, mixing thoroughly. Press this mixture evenly into the bottom of a 9×13-inch dish, forming a thin crust layer. Refrigerate for 20 minutes to chill.
  2. Make the Cream Cheese Filling: Soften the cream cheese by microwaving it on medium power for 30-40 seconds, stirring every 20 seconds until very soft but not warm. Using a hand mixer, beat the cream cheese and 1 cup confectioners’ sugar together until smooth and creamy, starting on low and then on high speed for 60 seconds. Spread this mixture evenly over the chilled graham cracker crust.
  3. Layer the Fruit: Evenly place the sliced bananas over the cream cheese layer. Drain the crushed pineapple and spoon it uniformly over the bananas. Next, arrange the sliced strawberries over the pineapple layer.
  4. Add the Whipped Topping and Garnish: Gently spread the softened whipped topping evenly over the fruit layers. Top with maraschino cherries and chopped peanuts if using.
  5. Chill and Serve: Refrigerate the cake for at least 2 hours or preferably overnight to allow flavors to meld and the dessert to set. Before serving, drizzle the chocolate sauce on top if desired.

Notes

  • Ensure cream cheese is softened to avoid lumps in the filling.
  • Use fresh ripe bananas and strawberries for the best flavor and texture.
  • The crushed pineapple should be well-drained to prevent sogginess.
  • Refrigeration time can be extended overnight for better flavor fusion and a firmer set.
  • Optional toppings like peanuts and chocolate sauce add extra texture and taste but can be omitted for allergies or preferences.
  • This dessert is best enjoyed chilled and consumed within 2-3 days for freshness.
