Description
A refreshing and healthy Kiwi Pudding made with ripe kiwis, creamy coconut milk, and chia seeds, sweetened naturally with honey or maple syrup. This vegan-friendly dessert is easy to prepare and perfect for a nutritious snack or light dessert.
Ingredients
Kiwi Pudding Ingredients
- 4 ripe kiwis, peeled and diced
- 1 cup coconut milk
- 2 tablespoons honey (or maple syrup for a vegan option)
- 2 tablespoons chia seeds
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions
- Blend the Ingredients: In a blender, combine the diced kiwis, coconut milk, honey (or maple syrup), chia seeds, vanilla extract, and a pinch of salt. Blend these ingredients until you achieve a smooth, uniform mixture.
- Refrigerate to Set: Pour the blended mixture into serving bowls or jars. Cover them and place in the refrigerator for at least 2 hours. This chilling time allows the chia seeds to absorb the liquid and thicken the pudding to a creamy consistency.
- Stir and Garnish: After the pudding has set, give it a good stir to ensure even texture. Garnish with fresh kiwi slices or other fruits of your choice to enhance the presentation and flavor before serving.
Notes
- For a vegan version, substitute honey with maple syrup or agave nectar.
- You can use any plant-based milk if coconut milk is unavailable.
- Adjust the sweetness according to your taste by adding more or less honey/maple syrup.
- Chia seeds can be soaked separately in milk for 10 minutes before blending for a thicker texture.
- Store leftovers covered in the refrigerator for up to 2 days for best freshness.
