Description

A refreshing and vibrant Kiwi Pineapple Salsa combining sweet pineapple, tangy kiwifruit, creamy avocado, and a hint of heat from jalapeño. Perfect as a dip for tortilla chips or a flavorful topping for fish tacos, grilled chicken, and salmon.


Ingredients

Fruit and Vegetables

  • 1/2 large firm avocado, cut into chunks (just very slightly ripe)
  • 1 1/2 cups diced pineapple
  • 1 cup peeled & diced Zespri SunGold Kiwifruit (about 2 kiwifruit)
  • 1 red bell pepper, finely diced
  • 1/4 cup finely diced red onion
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh chopped cilantro

Seasonings

  • Zest and juice of 1 small lime
  • Salt and pepper to taste


Instructions

  1. Combine Ingredients: Place the avocado, diced pineapple, diced kiwifruit, red bell pepper, red onion, jalapeño, and chopped cilantro into a medium bowl.
  2. Add Lime and Season: Add the zest and juice of the lime, then season with salt and pepper to taste. Mix gently to combine all flavors without mashing the avocado.
  3. Serve and Garnish: Garnish with extra cilantro and serve immediately with tortilla chips. This salsa is also delicious served on salmon, fish tacos, or grilled chicken.

Notes

  • Use a firm but ripe avocado to maintain texture.
  • Adjust jalapeño quantity to control heat level.
  • Double the recipe to serve larger groups (10-12 people).
