Ingredients
1 medium cauliflower head, cut into florets
2 tbsp butter
1 cup heavy cream
1 1/2 cups shredded sharp cheddar cheese
1/2 cup shredded mozzarella cheese
1/2 tsp garlic powder
1/4 tsp onion powder
Salt and pepper to taste
1 tbsp cream cheese (optional, for extra creaminess)
1/4 cup grated Parmesan cheese (optional, for topping)
Fresh parsley, chopped (optional, for garnish)
Instructions
-
Prepare the cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 8-10 minutes, or until fork-tender. Drain well and set aside. You can also pat the cauliflower dry with a paper towel to remove excess moisture.
 -
Make the cheese sauce: In a large saucepan, melt butter over medium heat. Add the heavy cream, garlic powder, onion powder, salt, and pepper. Stir to combine. Bring the mixture to a simmer, then lower the heat and add the shredded cheddar and mozzarella cheeses. Stir constantly until the cheese is melted and the sauce is smooth.
 -
For extra creaminess (optional): Stir in cream cheese until fully melted and incorporated into the sauce.
 -
Combine: Add the cooked cauliflower to the saucepan and gently toss to coat it in the cheese sauce.
 -
Optional broiling step: If desired, sprinkle grated Parmesan cheese over the top and place the cauliflower mac and cheese under the broiler for 2-3 minutes to create a golden, crispy crust.
 -
Garnish and serve: Garnish with fresh chopped parsley (optional) and serve hot.

Notes
-
Spicy: Add cayenne pepper or hot sauce to the cheese sauce for a spicy kick.
 -
Bacon: Top with crispy bacon bits for added flavor and crunch.
 -
Cheese variations: Try using different cheeses like Gouda, Gruyère, or Monterey Jack for a unique twist.
 -
Veggies: Add sautéed spinach, mushrooms, or broccoli for added texture and flavor.
