Description

Jamaican jerk sauce is a bold and fiery Caribbean condiment made with scotch bonnet peppers, aromatic spices, and herbs. This easy homemade sauce delivers the authentic heat, sweetness, and savory depth that defines jerk cooking—perfect for marinating chicken, pork, tofu, or vegetables.

Ingredients

  • Scallions (green onions)

  • Garlic cloves

  • Fresh thyme

  • Scotch bonnet peppers

  • Ground allspice

  • Ground nutmeg

  • Ground cinnamon

  • Brown sugar

  • Soy sauce

  • Lime juice

  • Olive oil

  • Salt and pepper

  • Optional: Vinegar, ginger, or orange juice

Instructions

  • Blend the Ingredients: Add all ingredients to a blender or food processor. Blend until smooth and thick, scraping down the sides as needed.

  • Adjust Seasoning: Taste and adjust the heat, sweetness, or acidity to your preference.

  • Use or Store: Use immediately to marinate meats or store in an airtight container in the refrigerator.

Notes

  • For a sweeter version, add orange juice or honey.

  • For more acidity, include vinegar.

  • To make it herb-forward, increase thyme or add parsley.

  • Store in the fridge for up to a week, or freeze in small portions for up to 3 months.

  • No reheating needed—use it cold or at room temperature.
