Description

Italian Chicken is a flavorful and easy-to-make dish featuring tender chicken breasts or thighs cooked in a savory tomato sauce with herbs, garlic, and Parmesan cheese. Perfect for weeknight dinners, it pairs wonderfully with pasta, rice, or crusty bread.


Ingredients

  1. 4 boneless, skinless chicken breasts or thighs
    2 tablespoons olive oil
    3 cloves garlic, minced
    1 (14-ounce) can crushed tomatoes
    1 teaspoon dried oregano
    1 teaspoon dried basil
    1/2 teaspoon red pepper flakes (optional)
    Salt and freshly ground black pepper, to taste
    1/4 cup grated Parmesan cheese
    Fresh basil or parsley for garnish

Instructions

Season chicken with salt, pepper, oregano, and basil.

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken and cook for 5-6 minutes per side until golden brown and cooked through. Remove and set aside.
  3. In the same skillet, sauté garlic until fragrant, about 1 minute.
  4. Add crushed tomatoes and red pepper flakes; simmer for 5-7 minutes to thicken.
  5. Return chicken to the skillet, spoon sauce over, and cook for another 3-4 minutes.
  6. Sprinkle Parmesan cheese on top and cover until cheese melts.
  7. Garnish with fresh herbs and serve.

Notes

  1. Add sliced mushrooms or olives to the sauce.
  2. Use fresh tomatoes instead of canned for a lighter sauce.
  3. Add a splash of white wine while simmering for depth.
  4. Serve over pasta, polenta, or with roasted vegetables.
  5. Top with mozzarella cheese for extra richness.
