Italian Chicken is a flavorful and easy-to-make dish featuring tender chicken breasts or thighs cooked in a savory tomato sauce with herbs, garlic, and Parmesan cheese. Perfect for weeknight dinners, it pairs wonderfully with pasta, rice, or crusty bread.
Ingredients
- 4 boneless, skinless chicken breasts or thighs
2 tablespoons olive oil
3 cloves garlic, minced
1 (14-ounce) can crushed tomatoes
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon red pepper flakes (optional)
Salt and freshly ground black pepper, to taste
1/4 cup grated Parmesan cheese
Fresh basil or parsley for garnish 
Instructions
Season chicken with salt, pepper, oregano, and basil.
- Heat olive oil in a large skillet over medium heat.
 - Add chicken and cook for 5-6 minutes per side until golden brown and cooked through. Remove and set aside.
 - In the same skillet, sauté garlic until fragrant, about 1 minute.
 - Add crushed tomatoes and red pepper flakes; simmer for 5-7 minutes to thicken.
 - Return chicken to the skillet, spoon sauce over, and cook for another 3-4 minutes.
 - Sprinkle Parmesan cheese on top and cover until cheese melts.
 - Garnish with fresh herbs and serve.

- Add sliced mushrooms or olives to the sauce.
 - Use fresh tomatoes instead of canned for a lighter sauce.
 - Add a splash of white wine while simmering for depth.
 - Serve over pasta, polenta, or with roasted vegetables.
 - Top with mozzarella cheese for extra richness.
