Ingredients
- 3/4 cup pumpkin puree
 - 3/4 cup all-purpose flour
 - 1/3 cup brown sugar
 - 2 large eggs
 - 2 tbsp vegetable oil
 - 1 tsp baking powder
 - 1/4 tsp baking soda
 - 1/2 tsp ground cinnamon
 - 1/4 tsp ground nutmeg
 - 1/4 tsp salt
 - 1 tsp vanilla extract
 - Optional: 1/4 cup mini chocolate chips or chopped nuts

Instructions
In a mixing bowl, whisk together pumpkin puree, brown sugar, eggs, oil, and vanilla extract until smooth.
- In a separate bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
 - Gradually stir dry ingredients into wet mixture until just combined. Fold in chocolate chips or nuts, if using.
 - Grease a silicone egg bite mold and fill each cavity about ¾ full with batter.
 - Pour 1 cup of water into the Instant Pot and insert the trivet.
 - Place the mold on the trivet and cover loosely with foil.
 - Seal the lid, set valve to Sealing, and pressure cook on High for 10 minutes.
 - Allow a natural pressure release for 10 minutes, then remove the lid.
 - Carefully lift out the mold and allow bites to cool slightly before removing.

Notes
- Grease the silicone mold well to prevent sticking.
 - Use canned pumpkin puree, not pumpkin pie filling.
 - Add extra spices or fillings like cream cheese for variation.
 - Do not overmix the batter to keep bites light and tender.
 - Cool slightly before removing from mold for best results.
