Deliciously rich and fudgy Instant Pot Brownie Bites made quickly and easily using silicone molds. These bite-sized treats feature a perfect blend of cocoa and espresso for a deep chocolate flavor, baked to perfection under pressure for a moist, chewy texture. Ingredients

Brownie Batter

  • 1 cup unsalted butter (melted)
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 2 tablespoons coffee (like espresso)
  • 4 eggs
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Additional

  • Nonstick cooking spray (for greasing molds)
  • Powdered sugar (for garnish)


Instructions

  1. Prepare molds: Lightly spray two Instant Pot egg bites silicone molds with nonstick cooking spray to prevent sticking during cooking.
  2. Mix ingredients: In a large bowl, combine the melted unsalted butter, white sugar, brown sugar, unsweetened cocoa powder, vanilla extract, espresso coffee, eggs, all-purpose flour, baking powder, and salt. Mix all ingredients thoroughly until the batter is smooth and uniformly blended.
  3. Divide batter: Evenly pour the batter into the silicone molds, filling each well approximately three-quarters full to allow room for the brownies to rise.
  4. Prepare Instant Pot: Pour 1 cup of water into the bottom of the Instant Pot. Place the trivet inside, then stack the filled silicone molds on top of the trivet.
  5. Seal and cook: Lock the Instant Pot lid and ensure the venting valve is sealed. Set the pressure cooker to cook on high pressure for 20 minutes.
  6. Release pressure: Once cooking is complete, allow the Instant Pot to naturally release pressure completely before opening the lid to avoid deflating the brownie bites.
  7. Cool and remove: Carefully remove the silicone molds from the Instant Pot and let them cool on a wire rack for about 10 minutes. Gently pop the brownie bites out of the molds once cooled.
  8. Garnish and serve: Arrange the brownie bites on a serving platter or wire rack and dust with powdered sugar to finish. Serve warm or at room temperature.

Notes

  • Make sure the molds are only filled ¾ full to prevent overflow during cooking.
  • Use espresso or strong coffee to enhance the chocolate flavor, but regular brewed coffee can be used as a substitute.
