Description

Ice Cream Sandwiches are a fun and customizable frozen dessert made with creamy ice cream layered between soft cookies, brownies, or cake-like layers. Perfect for summer days, parties, or make-ahead treats.

Ingredients

  • 1 quart ice cream (any flavor), slightly softened
  • 12 to 16 cookies, brownies, or cake-like layers (store-bought or homemade)
  • Optional: mini chocolate chips, sprinkles, crushed nuts, or cookie crumbs for coating
  • Parchment or wax paper (for wrapping and freezing)

Instructions

  1. Let the ice cream soften at room temperature for 5–10 minutes for easier spreading.
  2. If using homemade cookies or brownies, make sure they are completely cooled.
  3. Scoop or spread a layer of softened ice cream onto the flat side of one cookie or brownie layer.
  4. Top with another cookie or brownie, gently pressing to form a sandwich.
  5. Roll the edges in mini chocolate chips, sprinkles, or your favorite add-ins if desired.
  6. Wrap each sandwich individually in parchment or wax paper.
  7. Place the wrapped sandwiches in the freezer for at least 2 hours or until firm.
  8. Unwrap and serve directly from the freezer.

Notes

  • Soft, chewy cookies work best for easier biting when frozen.
  • For clean edges, smooth the ice cream with a spatula or butter knife after assembling.
  • Customize with different cookie and ice cream flavors for variety.
  • Use cookie cutters for fun shapes, especially for parties or kids.
  • Let sit at room temperature for 1–2 minutes if too firm to bite.
