Instructions
- Let the ice cream soften at room temperature for 5–10 minutes for easier spreading.

- Scoop or spread a layer of softened ice cream onto the flat side of one cookie or brownie layer.
- Top with another cookie or brownie, gently pressing to form a sandwich.
- Roll the edges in mini chocolate chips, sprinkles, or your favorite add-ins if desired.
- Wrap each sandwich individually in parchment or wax paper.
- Place the wrapped sandwiches in the freezer for at least 2 hours or until firm.
- Unwrap and serve directly from the freezer.
