Description

Honey Teriyaki Chicken Rice Bowls are a quick, flavorful meal combining juicy chicken coated in a sweet and savory teriyaki glaze, fluffy rice, and fresh vegetables. Perfect for easy weeknight dinners or meal prep, these bowls are healthier and tastier than takeout!


Ingredients

1 lb (450g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

2 tablespoons olive oil

2 cups cooked white or brown rice

1 cup broccoli florets, steamed

1 carrot, julienned or shredded

1/2 cup cucumber, sliced

For the honey teriyaki sauce:

1/4 cup soy sauce

2 tablespoons honey

1 tablespoon rice vinegar

1 tablespoon water

1 clove garlic, minced

1 teaspoon grated fresh ginger

1 teaspoon cornstarch mixed with 1 tablespoon water (optional, for thickening)


Instructions

Make the sauce: In a small bowl, whisk together soy sauce, honey, rice vinegar, water, garlic, and ginger. Set aside.

Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5–7 minutes.

Add the sauce: Pour the sauce over the chicken. Simmer for 2–3 minutes. Stir in cornstarch slurry if a thicker sauce is desired and cook another 1–2 minutes.

Assemble the bowls: Divide cooked rice among four bowls. Top each with teriyaki chicken, steamed broccoli, shredded carrot, and cucumber slices.

Serve: Garnish with sesame seeds or chopped green onions, if desired. Serve warm.
