Ingredients
- 1 pound Brussels sprouts, trimmed and halved
2 tablespoons olive oil
Salt and freshly ground black pepper, to taste
2 tablespoons balsamic vinegar
1 tablespoon honey
Optional: 1 teaspoon Dijon mustard for extra depth 
Instructions
Preheat your oven to 400°F (200°C).
- Toss the Brussels sprouts with olive oil, salt, and pepper.
 - Spread them evenly on a baking sheet, cut side down.
 - Roast for 20-25 minutes, shaking the pan halfway through, until sprouts are tender and caramelized.
 - While the sprouts roast, whisk together balsamic vinegar, honey, and Dijon mustard if using.
 - Remove Brussels sprouts from the oven and transfer to a large bowl.
 - Pour the honey balsamic glaze over the hot sprouts and toss gently to coat.
 - Serve immediately.

 - Use maple syrup instead of honey for a vegan option.
 - Toss with grated Parmesan cheese before serving.
