Description
Soft, chewy cookies paired with creamy ice cream to create customizable homemade ice cream sandwiches—perfect for summer treats or make-ahead desserts.
Ingredients
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup unsalted butter, softened
- 3/4 cup brown sugar
- 3/4 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 cups semi-sweet chocolate chips (or other mix-ins)
- 1.5 quarts ice cream flavor of choice, slightly softened
Instructions
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, and salt.
- In another large bowl, beat butter, brown sugar, and granulated sugar until creamy.
- Add eggs and vanilla extract, mixing until combined.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Fold in chocolate chips.
- Drop rounded spoonfuls of dough onto prepared baking sheets and bake for 9–11 minutes, until lightly golden.
- Cool cookies completely on a wire rack.
- Place a scoop of softened ice cream on the flat side of one cookie, top with another cookie, and press gently.
- Wrap each sandwich in plastic wrap and freeze for at least 2 hours before serving.
Notes
- Slightly underbake cookies for softer texture after freezing.
- Work quickly when assembling to prevent melting.
- Roll edges in sprinkles, mini chocolate chips, or nuts for decoration.
- Can be made with store-bought cookies for a quicker version.
