Description

Soft, chewy cookies paired with creamy ice cream to create customizable homemade ice cream sandwiches—perfect for summer treats or make-ahead desserts.


Ingredients

  1. 2 1/4 cups all-purpose flour
  2. 1 tsp baking soda
  3. 1/2 tsp salt
  4. 1 cup unsalted butter, softened
  5. 3/4 cup brown sugar
  6. 3/4 cup granulated sugar
  7. 2 large eggs
  8. 2 tsp vanilla extract
  9. 2 cups semi-sweet chocolate chips (or other mix-ins)
  10. 1.5 quarts ice cream flavor of choice, slightly softened

Instructions

Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

  1. In a bowl, whisk together flour, baking soda, and salt.
  2. In another large bowl, beat butter, brown sugar, and granulated sugar until creamy.
  3. Add eggs and vanilla extract, mixing until combined.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Fold in chocolate chips.
  6. Drop rounded spoonfuls of dough onto prepared baking sheets and bake for 9–11 minutes, until lightly golden.
  7. Cool cookies completely on a wire rack.
  8. Place a scoop of softened ice cream on the flat side of one cookie, top with another cookie, and press gently.
  9. Wrap each sandwich in plastic wrap and freeze for at least 2 hours before serving.

Notes

  1. Slightly underbake cookies for softer texture after freezing.
  2. Work quickly when assembling to prevent melting.
  3. Roll edges in sprinkles, mini chocolate chips, or nuts for decoration.
  4. Can be made with store-bought cookies for a quicker version.
