Ingredients
1 lb ground beef
1 onion, diced
3 cloves garlic, minced
4 medium potatoes, peeled and diced
3 carrots, sliced
2 stalks celery, sliced
1 can (14.5 oz) diced tomatoes
6 cups beef or vegetable broth
1 teaspoon dried thyme
1 teaspoon dried oregano
Salt and pepper to taste
Optional: 1 cup frozen peas or corn
Instructions
- In a large pot or Dutch oven, brown ground beef over medium heat until cooked through. Drain excess fat if needed.
 - Add onion and garlic; sauté until softened, about 3-4 minutes.
 - Stir in potatoes, carrots, celery, diced tomatoes, broth, thyme, oregano, salt, and pepper.
 - Bring to a boil, then reduce heat and simmer for 30-35 minutes until vegetables are tender.
 - Add frozen peas or corn during the last 5 minutes of cooking, if using.
 - Adjust seasoning to taste and serve hot.
