Ingredients
2 tablespoons olive oil
1 medium onion, diced
2 cloves garlic, minced
2 medium carrots, diced
1 zucchini, diced
1 bell pepper, diced
1 can (14.5 oz) diced tomatoes
1 can (15 oz) tomato sauce
4 cups vegetable broth
8 oz lasagna noodles, broken into pieces
1 tablespoon dried basil
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes (optional)
Salt and pepper, to taste
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Fresh basil, for garnish
Instructions

Heat olive oil in a large pot over medium heat. Add diced onion and garlic, cooking for about 3-4 minutes until softened.

Add carrots, zucchini, and bell pepper to the pot and cook for another 5-6 minutes until the vegetables are tender.
