Ingredients

Dough

  • 1½ cups whole wheat flour
  • ½ cup vanilla protein powder
  • 2 tablespoons coconut sugar or brown sugar
  • ½ teaspoon salt
  • ½ cup unsalted butter or coconut oil, chilled and cubed
  • 45 tablespoons cold milk or almond milk

Filling

  • ½ cup fruit jam, nut butter, or chocolate spread

  • ½ cup powdered sugar or vanilla protein powder
  • 23 tablespoons milk or almond milk

Instructions

  1. Preheat and prepare baking sheet: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and facilitate even baking.
  2. Mix dry ingredients and cut in butter: In a large bowl, combine whole wheat flour, vanilla protein powder, coconut or brown sugar, and salt. Cut in the chilled butter or coconut oil using a pastry cutter or fingers until the mixture resembles coarse crumbs.
  3. Add milk and chill dough: Gradually add cold milk or almond milk a tablespoon at a time, mixing until the dough just comes together. Wrap the dough in plastic wrap and chill in the refrigerator for 20 minutes for easier handling and a flakier texture.
