Cookie Batter

  • 3 tbsp (1.5 fl oz / 44 ml) maple syrup
  • 1/4 tsp cinnamon
  • 1 3/4 cups (164 g) quick oats


Instructions

  1. Preheat Oven: Preheat your oven to 350°F (177°C) and line a large cookie sheet with parchment paper or a silicone baking mat to prevent sticking and ensure even baking.
  2. Mix Ingredients: In a large mixing bowl, combine the carrot puree, maple syrup, and cinnamon. Stir these together until evenly mixed. Then add the quick oats and mix thoroughly so that the oats are fully coated and the batter thickens slightly. Let the mixture rest for about 5 minutes. Optionally, fold in mix-ins such as chopped nuts, chocolate chips, or raisins if desired.
  3. Shape Cookies: Using a 1 tablespoon cookie scoop, portion out about 2 tablespoons of batter for each cookie. Place them spaced approximately 1.5 inches apart on the prepared baking sheet for adequate spreading.
  4. Flatten and Shape: Use the back of a metal spoon to gently flatten each dough mound and shape them into thick round disks between 1/2 to 3/4 inch thick. If the dough sticks to the spoon, lightly wet it with water before shaping. Note that cookies will not spread much during baking, so shape them to your preferred thickness and size.
