Ingredients
- 4 small whole wheat or corn tortillas
4 large eggs (or tofu scramble for vegan option)
1/2 cup black beans, rinsed and drained
1/2 cup diced tomatoes
1/2 avocado, sliced
1/4 cup shredded cheese (optional)
1/4 cup chopped fresh cilantro
1 tablespoon olive oil or cooking spray
Salt and pepper to taste
Salsa or hot sauce for serving 
Instructions
Heat olive oil in a skillet over medium heat. Scramble eggs until cooked through. Season with salt and pepper.
- Warm tortillas in a dry skillet or microwave until soft and pliable.
 - Divide scrambled eggs evenly among tortillas. Top with black beans, diced tomatoes, avocado slices, and cheese if using.
 - Sprinkle chopped cilantro on top and add salsa or hot sauce as desired.
 - Fold the tortillas and serve immediately.
