Description

These Healthy Avocado Mochi Blondies are a delicious and nutritious twist on traditional blondies, combining the unique texture of mochiko flour with creamy avocado and natural sweeteners. Perfect for a gluten-free treat, these blondies offer a moist, chewy bite with subtle sweetness and a vibrant green hue, baked to perfection in under 40 minutes.

Ingredients

Dry Ingredients

  • ½ cup mochiko flour (sweet rice or glutinous rice flour)
  • ½ cup almond flour (oat flour, whole wheat, or plain flour also acceptable)
  • ¼ cup honey or maple syrup or light-colored granulated sugar of choice*
  • 1 pinch salt

Wet Ingredients

  • 1 medium ripe avocado (⅔ cup mashed)
  • 1 large egg

Instructions

  1. Mix Dry Ingredients: In a bowl, combine mochiko flour, almond flour, and a pinch of salt. Stir these dry components together to ensure they are evenly distributed before adding wet ingredients.
  2. Add Wet Ingredients: Incorporate the mashed ripe avocado, large egg, and chosen sweetener (honey, maple syrup, or light-colored granulated sugar) into the bowl with the dry ingredients. Stir thoroughly until the batter is smooth and well combined without lumps.
  3. Prepare Baking Pan: Grease a loaf or small cake pan well using olive oil cooking spray or melted coconut oil, making sure to cover the sides as well to prevent sticking.
  4. Pour Batter: Transfer the smooth batter into the prepared pan, spreading it out evenly for uniform baking.
  5. Bake: Preheat the oven to 350°F (175°C) and bake the blondies for 30 to 40 minutes. Use a toothpick inserted in the center to test doneness—it should come out clean when fully baked.

Notes

  • Use a light-colored sweetener such as honey or light-colored maple syrup to maintain the vibrant green color of the blondies.
  • For keto-friendly options, stevia can be used, but conversion according to the stevia brand instructions is necessary as sweetness levels vary.
  • Olive oil cooking spray is recommended for greasing the pan, but other vegetable oil sprays or melted coconut oil also work well.
  • Ensure the sides of the pan are greased properly to prevent the blondies from sticking.
