Description

Healthier Ferrero Rocher are homemade chocolate hazelnut truffles inspired by the iconic candy, but made with wholesome, nutritious ingredients. These treats are rich, creamy, and have a satisfying crunch—all without refined sugars or artificial ingredients.


Ingredients

  1. 1 cup hazelnuts (roasted and skins removed)
    1/2 cup dates (softened if needed)
    1/4 cup unsweetened cocoa powder
    2 tablespoons hazelnut butter or almond butter
    1/2 teaspoon vanilla extract
    Pinch of salt
    1/2 cup dark chocolate chips (for coating)
    Optional: crushed hazelnuts for rolling

Instructions

In a food processor, blend hazelnuts until finely ground (reserve some whole hazelnuts if you want a center crunch).

  1. Add dates, cocoa powder, hazelnut butter, vanilla, and salt. Blend until a sticky dough forms.
  2. Scoop and roll into small balls, pressing a whole hazelnut into the center if desired.
  3. Freeze the balls for 20-30 minutes until firm.
  4. Melt dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  5. Dip each ball into the melted chocolate and roll in crushed hazelnuts if using.
  6. Place on parchment paper and refrigerate until chocolate is set.
