Description

Haystack Cookies are a simple, no-bake treat made with crunchy chow mein noodles, sweet chocolate, and peanut butter, creating a delicious combination of crispy, chewy, and sweet flavors.


Ingredients

  1. Chow mein noodles (or crispy noodles)
  2. Semi-sweet chocolate chips (or milk chocolate if preferred)
  3. Peanut butter (creamy or chunky, depending on preference)
  4. Butterscotch chips (optional, but adds extra sweetness)

Instructions

In a microwave-safe bowl, melt the chocolate chips and peanut butter together. Stir every 20-30 seconds to ensure smooth melting.

  1. Once melted, add the chow mein noodles to the mixture, stirring until all noodles are coated.
  2. For added sweetness, melt the butterscotch chips with the chocolate and peanut butter if using.
  3. Spoon spoonfuls of the mixture onto wax paper or parchment paper, forming small mounds.
  4. Allow the cookies to set at room temperature for 1–2 hours or place in the fridge to speed up the process.
