Description

Ingredients

  1. 1 (8 oz) package cream cheese, softened
  2. 1 cup heavy cream
  3. ½ cup powdered sugar
  4. 1 teaspoon vanilla extract
  5. 1 (20 oz) can crushed pineapple, drained
  6. 1 cup diced mango
  7. 1 cup diced strawberries
  8. 1 cup diced kiwi
  9. 1 cup seedless grapes, halved
  10. 1 cup coconut flakes (optional)
  11. ¼ cup chopped pecans or walnuts (optional)

Instructions

In a mixing bowl, beat the softened cream cheese until smooth. Add the powdered sugar and vanilla extract, continuing to beat until the mixture is fluffy and well-combined.

  1. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture, being careful not to deflate the whipped cream.
  2. In a large bowl, combine the drained crushed pineapple, diced mango, strawberries, kiwi, and halved grapes. Gently toss the fruit to combine.
  3. Add the creamy cheesecake mixture to the bowl with the fruit and gently fold everything together until the fruit is evenly coated with the creamy filling.
  4. If desired, sprinkle coconut flakes and chopped nuts over the top for added texture and flavor.
  5. Cover the fruit salad and refrigerate for at least 1 hour before serving to allow the flavors to meld together.
