Ingredients
- 1 lb (450g) ground beef
- 1 tbsp olive oil (if needed)
- 1 small onion, diced
- 2 cloves garlic, minced
- 8 oz (225g) cremini or white mushrooms, sliced
- 1 tsp Worcestershire sauce
- 1 tsp smoked paprika
- ½ tsp salt (or to taste)
- ½ tsp black pepper
- 2 cups beef broth
- 1 cup whole milk or heavy cream
- 2 cups egg noodles
- ½ cup sour cream
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Cook the beef – In a large skillet or deep pan, cook ground beef over medium heat until browned. Drain excess grease if necessary.
- Sauté the aromatics – Add diced onion and garlic, cooking until softened (about 2 minutes).
- Add mushrooms & seasoning – Stir in mushrooms, Worcestershire sauce, paprika, salt, and pepper. Cook for another 3-4 minutes until mushrooms are tender.
- Simmer with noodles – Pour in beef broth and milk, then add the egg noodles. Stir, bring to a simmer, and cover. Cook for 10-12 minutes, stirring occasionally, until noodles are tender.
- Make it creamy – Reduce heat to low and stir in sour cream until smooth and fully incorporated. Adjust seasoning if needed.
- Serve & garnish – Sprinkle with fresh parsley and serve warm.
Notes
- Swap egg noodles for rotini or fettuccine if preferred.
- Add a splash of white wine when cooking mushrooms for extra depth of flavor.
- For a richer sauce, use heavy cream instead of milk.
- Make it lighter by using Greek yogurt instead of sour cream
