Ingredients
- 2 pounds chicken wings, tips removed
1 large ripe mango, peeled and diced
2 chipotle peppers in adobo sauce
2 tablespoons adobo sauce (from the chipotle peppers can)
3 cloves garlic, minced
1 tablespoon honey or maple syrup
2 tablespoons lime juice
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
Salt and freshly ground black pepper, to taste
1 tablespoon olive oil
Fresh cilantro, chopped (for garnish)
Lime wedges (for serving)
Instructions
In a blender or food processor, combine mango, chipotle peppers, adobo sauce, garlic, honey, lime juice, cumin, smoked paprika, salt, pepper, and olive oil. Blend until smooth to make the marinade.
- Place chicken wings in a large bowl or resealable plastic bag. Pour marinade over wings and toss to coat evenly. Marinate in the refrigerator for at least 2 hours, preferably overnight.
- Preheat grill to medium-high heat.
- Remove wings from marinade, reserving excess marinade.
- Grill wings for 20-25 minutes, turning occasionally, until cooked through and charred in spots.
- During the last 5 minutes, brush wings with reserved marinade and continue grilling.
- Remove from grill and let rest for a few minutes.
- Garnish with chopped cilantro and serve with lime wedges.
Notes
- Bake wings in the oven at 400°F (200°C) for 35-40 minutes if you don’t have a grill.
- Add fresh jalapeño or cayenne for extra heat.
- Use pineapple instead of mango for a different tropical twist.
- Serve with a cooling yogurt or avocado dip.
- Toss wings with chopped green onions or sesame seeds before serving.
