Description

Grilled Mango-Chipotle Chicken Wings are juicy wings marinated in a sweet, smoky, and spicy mango-chipotle sauce, then grilled to perfection with a caramelized char. Perfect for summer cookouts or game days, they offer a vibrant flavor balance that’s sure to impress.


Ingredients

  1. 2 pounds chicken wings, tips removed
    1 large ripe mango, peeled and diced
    2 chipotle peppers in adobo sauce
    2 tablespoons adobo sauce (from the chipotle peppers can)
    3 cloves garlic, minced
    1 tablespoon honey or maple syrup
    2 tablespoons lime juice
    1 teaspoon ground cumin
    1/2 teaspoon smoked paprika
    Salt and freshly ground black pepper, to taste
    1 tablespoon olive oil
    Fresh cilantro, chopped (for garnish)
    Lime wedges (for serving)

Instructions

In a blender or food processor, combine mango, chipotle peppers, adobo sauce, garlic, honey, lime juice, cumin, smoked paprika, salt, pepper, and olive oil. Blend until smooth to make the marinade.

  1. Place chicken wings in a large bowl or resealable plastic bag. Pour marinade over wings and toss to coat evenly. Marinate in the refrigerator for at least 2 hours, preferably overnight.
  2. Preheat grill to medium-high heat.
  3. Remove wings from marinade, reserving excess marinade.
  4. Grill wings for 20-25 minutes, turning occasionally, until cooked through and charred in spots.
  5. During the last 5 minutes, brush wings with reserved marinade and continue grilling.
  6. Remove from grill and let rest for a few minutes.
  7. Garnish with chopped cilantro and serve with lime wedges.

Notes

  1. Bake wings in the oven at 400°F (200°C) for 35-40 minutes if you don’t have a grill.
  2. Add fresh jalapeño or cayenne for extra heat.
  3. Use pineapple instead of mango for a different tropical twist.
  4. Serve with a cooling yogurt or avocado dip.
  5. Toss wings with chopped green onions or sesame seeds before serving.
