Ingredients
- 4 boneless, skinless chicken breasts or thighs
1/4 cup fresh lemon juice
1/4 cup olive oil
3 cloves garlic, minced
2 tablespoons fresh parsley, chopped
1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
1 teaspoon dried oregano
Salt and freshly ground black pepper, to taste 
Instructions
In a bowl, whisk together lemon juice, olive oil, garlic, parsley, thyme, oregano, salt, and pepper.
- Place chicken in a resealable plastic bag or shallow dish and pour marinade over. Seal or cover and refrigerate for at least 1 hour, preferably 2-4 hours.
 - Preheat grill to medium-high heat.
 - Remove chicken from marinade and discard marinade.
 - Grill chicken for 6-8 minutes per side, or until internal temperature reaches 165°F (74°C) and juices run clear.
 - Remove from grill and let rest for 5 minutes before serving.

- Add lemon zest to the marinade for extra citrus flavor.
 - Use fresh rosemary or basil instead of thyme and oregano.
 - Serve with grilled vegetables or a fresh salad.
