Description

Ingredients

For the Steaks:

4 bison ribeye steaks (1014 oz each)

2 tablespoons olive oil

1 teaspoon kosher salt

½ teaspoon freshly ground black pepper

½ teaspoon garlic powder

½ teaspoon onion powder

For the Herb Butter (Optional):

4 tablespoons unsalted butter, softened

1 tablespoon chopped fresh thyme

1 tablespoon chopped fresh rosemary

1 teaspoon horseradish (optional)

Salt and pepper to taste


Instructions

  • Prepare Herb Butter (Optional):
    Mix butter with herbs, horseradish (if using), salt, and pepper. Form into a log using plastic wrap. Chill until firm.

  • Season the Steaks:
    Pat steaks dry. Brush with olive oil and rub both sides with salt, pepper, garlic powder, and onion powder.

  • Preheat Grill:
    Heat grill to high (600–700°F). Clean and oil grates.

  • Grill the Steaks:
    Place steaks on grill. Sear for about 4 minutes per side for medium-rare, or until internal temp reaches 130°F.

  • Rest & Serve:
    Remove from grill. Top with herb butter if using. Tent with foil and rest for 5–10 minutes before serving.

Notes

  • Don’t overcook — bison is best at medium-rare to medium.

  • Swap herb butter with blue cheese butter or garlic-parsley butter.

  • Indoor option: Use a hot cast iron skillet for similar results.
