Description

Greek yogurt cinnamon rolls are a lighter, quicker alternative to traditional cinnamon rolls, featuring a soft, tangy dough and a sweet cinnamon-sugar filling. They’re perfect for breakfast, brunch, or dessert.

Ingredients

  1. 2 cups all-purpose flour
  2. 2 teaspoons baking powder
  3. 1/2 teaspoon baking soda
  4. 1/4 teaspoon salt
  5. 1 cup Greek yogurt
  6. 24 tablespoons milk
  7. 1/4 cup melted butter (plus extra for greasing)
  8. 1/3 cup brown sugar
  9. 1 tablespoon ground cinnamon
  10. 1/2 cup powdered sugar (for glaze, optional)
  11. 1/2 teaspoon vanilla extract (for glaze, optional)
  12. 12 teaspoons milk (for glaze, optional)

Instructions

Preheat oven to 350°F (175°C) and lightly grease a baking dish.

  1. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  2. Stir in Greek yogurt and 2 tablespoons of milk to form a soft dough. Add more milk if needed. Knead gently until smooth.
  3. On a lightly floured surface, roll the dough into a rectangle about 1/4-inch thick.
  4. Brush melted butter over the dough and sprinkle evenly with brown sugar and cinnamon.
  5. Roll the dough tightly into a log and slice into 8–10 even rolls.
  6. Place the rolls into the greased baking dish, spacing slightly apart.
  7. Bake for 20–25 minutes, or until golden brown and cooked through.
  8. Optional: In a small bowl, whisk powdered sugar, vanilla extract, and milk to make a glaze. Drizzle over warm rolls before serving.

Notes

  • Add chopped nuts or raisins to the filling for texture.
  • Use maple syrup instead of brown sugar for natural sweetness.
  • Cream cheese frosting makes a rich topping.
  • Add cardamom or nutmeg with cinnamon for a spiced flavor.
  • Make mini rolls by cutting smaller pieces and shortening bake time.
