This traditional Greek Sesame Candy, known as Pasteli, is a simple yet delightful treat made from just sesame seeds and honey. Ingredients
For the Sesame Candy
- 1 1/2 cups untoasted sesame seeds
- 3/4 cup honey
For Preparation
- Extra virgin olive oil (for greasing the pan)
Instructions
- Prepare the pan. Line a small sheet pan with parchment paper and brush it with a thin layer of extra virgin olive oil to prevent sticking. Set aside.
- Toast the sesame seeds. Place the sesame seeds in a nonstick pan over medium heat. Stir constantly with a wooden spoon until they turn a golden brown color, which enhances their nutty flavor. Once toasted, transfer the seeds to a plate to cool.
- Warm and boil the honey. Return the pan to medium heat and pour in the honey. Stir regularly as the honey warms and begins to boil. Use a thermometer to check if it reaches around 250°F. Allow it to boil and foam gently for 3 to 4 minutes to achieve the right consistency.
- Combine sesame seeds and honey. Add the toasted sesame seeds back into the boiling honey. Stir constantly for about 5 minutes to evenly coat the seeds and cook the mixture while being careful to adjust the heat to prevent burning.
- Pour and spread the mixture. Immediately pour the hot sesame and honey mixture onto the prepared sheet pan. Spread it as evenly as possible using a spoon. Grease another sheet of parchment paper and place it on top to help flatten the mixture evenly. Use your hands or a small rolling pin to gently spread the mixture. Remove and discard the top parchment paper.
- Cool and slice. Allow the candy to cool for approximately 20 minutes, until it firms up but is not fully hardened. Use a sharp knife to slice into small rectangular bars or squares for serving.

- Be careful when working with hot honey as it can cause burns.
