Ingredients

  1. 1 package phyllo dough (about 20 sheets), thawed
  2. 3 large eggs
  3. 1 cup granulated sugar
  4. 1 cup orange juice (freshly squeezed)
  5. 1 teaspoon orange zest
  6. 1 cup plain yogurt
  7. ½ cup vegetable oil or melted butter
  8. 1 teaspoon vanilla extract
  9. ½ teaspoon baking powder
  10. 1 cup granulated sugar (for syrup)
  11. 1 cup water (for syrup)
  12. 1 cup orange juice (for syrup)
  13. 1 teaspoon lemon juice (for syrup)

Instructions

Prepare the syrup:
Combine sugar, water, orange juice, and lemon juice in a saucepan. Bring to a simmer, stirring occasionally until the sugar dissolves. Let simmer for 10-15 minutes until thickened slightly. Remove from heat and set aside to cool.

  1. Prepare the pie:
    Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish. Whisk together eggs, sugar, orange juice, orange zest, yogurt, oil, vanilla, and baking powder in a large bowl until smooth. Tear the phyllo dough into small pieces and mix it into the batter. Pour the mixture into the prepared dish and bake for 40-45 minutes until golden brown.
  2. Soak the pie with syrup:
    Once baked, remove the pie from the oven and immediately pour the cooled syrup over it. Let the pie cool, then refrigerate for at least 2 hours.
  3. Serve:
    Once chilled, cut into squares and garnish with extra orange zest or powdered sugar if desired.
