Description
Grandma’s Coca-Cola Cake is a classic Southern dessert that brings together the rich flavors of chocolate and Coca-Cola in a moist cake topped with a fudgy, gooey icing, making it a crowd-pleaser for any occasion.
Ingredients
- For the cake:
- 1 cup of Coca-Cola (regular, not diet)
- 1/2 cup of unsalted butter
- 1/4 cup of vegetable oil
- 3 tablespoons of unsweetened cocoa powder
- 2 cups of all-purpose flour
- 2 cups of granulated sugar
- 1 teaspoon of baking soda
- 1/2 teaspoon of salt
- 2 large eggs
- 1/2 cup of buttermilk
- 1 teaspoon of vanilla extract
- For the icing:
- 1/2 cup of unsalted butter
- 3 tablespoons of unsweetened cocoa powder
- 1/4 cup of Coca-Cola (regular)
- 3 1/2 cups of powdered sugar
- 1 teaspoon of vanilla extract
- 1/2 cup of chopped pecans (optional)
Instructions
Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
- Combine wet ingredients: In a saucepan, combine the Coca-Cola, butter, vegetable oil, and cocoa powder. Heat over medium heat, stirring frequently until the butter is melted and the mixture is smooth. Remove from heat and set aside to cool slightly.
- Mix dry ingredients: In a large bowl, whisk together the flour, sugar, baking soda, and salt.
- Combine wet and dry ingredients: Slowly pour the warm Coca-Cola mixture into the dry ingredients, stirring to combine. Once mixed, add the eggs, buttermilk, and vanilla extract. Stir until everything is well incorporated.
- Bake the cake: Pour the batter into the prepared baking dish and spread it evenly. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan while you prepare the icing.
- Prepare the icing: In a saucepan, combine the butter, cocoa powder, and Coca-Cola. Heat over medium heat, stirring occasionally until the butter is melted and the mixture is smooth.
- Add powdered sugar: Remove from heat and whisk in the powdered sugar and vanilla extract. Stir until everything is smooth and well combined.
- Frost the cake: While the cake is still warm, pour the icing over the top. Use a spatula to spread it evenly, allowing it to melt slightly into the cake for an extra gooey texture. If desired, sprinkle chopped pecans on top of the icing.
- Cool and serve: Allow the cake to cool slightly before serving. The icing will firm up as the cake cools.
Notes
- If you don’t have buttermilk, you can substitute with regular milk mixed with 1 tablespoon of vinegar or lemon juice.
- If you prefer a lighter frosting, you can use cream cheese frosting, though it will change the flavor profile.
- This cake can be made a day ahead of time for better flavor development.
- Feel free to add chocolate chips or crushed candy bars to the batter for added texture.
