Ingredients
Base
- 15 graham crackers
Toffee Layer
- 1 cup butter
- 1 cup brown sugar (dark or light)
- ½ teaspoon sea salt
Toppings
- 1 ½ cups pecans (chopped)
- 10 ounces dark chocolate (chopped)
- 6 ounces milk chocolate (chopped)
- ½ teaspoon sea salt (for sprinkling)
Instructions
- Preheat Oven: Preheat your oven to 350ºF to prepare for baking the toffee confection.
- Prepare Baking Sheet: Line a rimmed baking sheet with parchment paper. Arrange the graham crackers on the sheet so they are touching each other, creating a solid base layer.
- Make Toffee Mixture: In a medium saucepan, combine butter, brown sugar, and ½ teaspoon of sea salt. Bring the mixture to a boil without stirring. Use a candy thermometer to monitor temperature and boil for 2–3 minutes until it reaches 300ºF (hard crack stage).
- Pour Toffee Over Crackers: Immediately pour the hot toffee mixture evenly over the graham crackers on the baking sheet. Spread it gently to cover all crackers and bake in the oven for 8–10 minutes until the mixture is bubbly but not burnt.
- Melt Chocolate: While the toffee bakes, melt the dark and milk chocolate in the microwave by heating in 30-second intervals, stirring each time, until smooth and just melted.
- Top Toffee with Chocolate & Pecans: Remove the toffee from the oven and pour the melted chocolate evenly over the hot candy layer. Sprinkle chopped pecans and flaky sea salt over the chocolate topping.
- Chill and Break: Place the baking sheet in the refrigerator and chill for at least 45 minutes until the chocolate is set. Once firm, break the toffee into pieces and serve or store in an airtight container.
Notes
- Be careful not to burn the toffee; keep a close eye during boiling and baking.
- Use parchment paper to prevent sticking and for easy cleanup.
- For extra crunch, toast pecans lightly before chopping.
- Store in a cool, dry place in an airtight container for up to two weeks.
- Adjust chocolate types or add nuts according to preference.
