For the Pasta:

  • 1 pound elbow macaroni

For the Cheese Sauce:

  • 2 cups freshly shredded cheddar cheese
  • ½ cup freshly shredded Gouda cheese
  • ¼ cup unsalted butter
  • ¼ cup all-purpose flour

  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon smoked paprika

Instructions

  • Cook the Pasta:

    • Bring a large pot of salted water to a boil.
    • Cook the macaroni until al dente according to package directions.
    • Drain and set aside.
  • Make the Roux:

    • Add flour and whisk continuously until the mixture turns light brown, about 1-2 minutes.
  • Add the Milk:

    • Gradually whisk in the diluted powdered milk (or whole milk), stirring constantly.
    • Continue stirring until the sauce begins to thicken.
  • Season the Sauce:

    • Stir in salt, black pepper, and smoked paprika.
  • Melt the Cheese:

    • Remove the skillet from heat.
    • Add the cheddar and Gouda cheeses, stirring until completely melted and smooth.
  • Combine with Pasta:

    • Fold in the cooked macaroni, ensuring each piece is thoroughly coated in the cheese sauce.
  • Final Touch:

    • Adjust seasoning to taste and finish with a sprinkle of smoked paprika.
    • Serve immediately while hot.
