- 1 tbsp ketchup
- 1 tsp Dijon mustard
- 1 tsp paprika
- Salt and pepper to taste
- 4 sandwich rolls or buns
- 4 oz provolone cheese or mozzarella cheese (sliced)

Instructions
- Heat olive oil in a large skillet over medium heat. Add the chopped onion, bell pepper, and garlic, cooking until softened, about 3–4 minutes.
- Add the ground beef, breaking it apart with a spoon. Cook until browned and cooked through.
- Stir in Worcestershire sauce, soy sauce, ketchup, Dijon mustard, paprika, salt, and pepper. Mix well.
- Pour in the beef broth and stir. Let the mixture simmer for 5–7 minutes until the sauce thickens and flavors meld together.
- In a separate pan, melt butter and toast the sandwich rolls until golden brown.
- Spoon the sloppy joe mixture onto the toasted rolls, then top with slices of provolone or mozzarella cheese. Let the cheese melt slightly before serving.
Notes
- You can use cheddar or American cheese for a different twist.
- For extra flavor, sauté mushrooms along with the onions and bell peppers.
- Add some diced jalapeños or hot sauce for a spicy version.
- Swap ground beef for ground turkey or chicken for a lighter option.
