Description

Gooey Pecan Pie Bars are rich, handheld dessert bars with a buttery shortbread crust and a luscious, nutty pecan filling. All the flavor of classic pecan pie, made easy for slicing and sharing.


Ingredients

  • For the crust:
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 tsp salt
  • 1 cup unsalted butter, cold and cubed
  • For the filling:
  • 3 large eggs
  • 1 cup brown sugar, packed
  • 1 cup corn syrup (light or dark)
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/4 cup unsalted butter, melted
  • 2 cups chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper or foil, leaving overhang for easy removal.
  2. In a medium bowl, mix flour, sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs.
  3. Press the crust mixture evenly into the bottom of the prepared pan.
  4. Bake for 15–18 minutes, or until lightly golden. Set aside to cool slightly.
  5. In a large bowl, whisk together eggs, brown sugar, corn syrup, melted butter, vanilla, and salt until smooth.
  6. Stir in chopped pecans.
  7. Pour the filling over the pre-baked crust and spread evenly.
  8. Bake for 30–35 minutes, or until the center is set and the top is golden and bubbly.
  9. Cool completely in the pan, then chill for 1–2 hours before slicing for clean edges.

Notes

  • For extra flavor, add 1–2 tablespoons of bourbon to the filling.
  • Replace corn syrup with maple syrup or golden syrup for a variation.
  • Use chopped nuts for easier slicing and even distribution.
  • Chilling before slicing helps get neat, clean bars.
  • These bars freeze well—layer with parchment paper to avoid sticking.
