Description

Gnocchi alla Sorrentina is a classic Italian dish with pillowy gnocchi in a rich tomato sauce, topped with mozzarella and Parmesan cheese. It’s a comforting and satisfying meal perfect for any occasion, with a wonderful combination of savory flavors and gooey cheese.

Ingredients

  1. 1 lb potato gnocchi (store-bought or homemade)
    2 tablespoons olive oil
    2 cloves garlic, minced
1 can (14.5 oz) crushed tomatoes
    1 tablespoon tomato paste
    1 teaspoon dried basil
    1 teaspoon dried oregano
    Salt and pepper to taste
1/2 cup fresh mozzarella cheese, cubed or shredded
    1/4 cup grated Parmesan cheese
    Fresh basil leaves (for garnish)
Optional: Red pepper flakes (for a spicy kick)

Instructions

Cook the Gnocchi: In a large pot of salted boiling water, cook the gnocchi according to package instructions or until they float to the surface (about 2-3 minutes). Remove with a slotted spoon and set aside.

  1. Make the Sauce: In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Be careful not to burn the garlic.
  2. Add Tomatoes and Seasoning: Stir in crushed tomatoes and tomato paste. Sprinkle in basil, oregano, salt, and pepper. Let the sauce simmer for 10-15 minutes to thicken.
  3. Combine Gnocchi and Sauce: Add the cooked gnocchi to the skillet with the tomato sauce and gently toss to coat. Let it simmer for another 2-3 minutes.
  4. Add Cheese: Stir in mozzarella and Parmesan cheese. Cook for an additional 2 minutes until the cheese melts and forms a gooey sauce.
  5. Serve: Garnish with fresh basil and red pepper flakes (if using). Serve immediately.

Notes

  1. For a vegan version, use dairy-free cheese alternatives like cashew cheese or nutritional yeast.
  2. Add sautéed vegetables like spinach or zucchini to the sauce for extra nutrition and flavor.
  3. Frozen gnocchi works just as well as fresh—simply cook according to the package instructions.
  4. If you don’t have mozzarella, try provolone or fontina cheese for a similar melt.
