- Set the oven and prepare pan: Preheat your oven to 350°F (175°C). Line a sheet pan with parchment paper to prevent sticking and ensure easy cleanup.
- Make the batter: In a medium-sized bowl, combine the 2 egg whites with ¾ cup of the granulated sugar. Use a large fork to mix until well blended. Add the creamy, salted peanut butter and continue mixing with the fork or a large spoon until the batter is smooth. For lumpy peanut butter, using an electric mixer is recommended for a smoother consistency.
- Shape the cookies: Using a 1¼-inch cookie scoop, scoop the batter onto the prepared sheet pan as balls. Leave them fairly close but make sure to allow space for flattening. Alternatively, roll the batter between your palms in generous tablespoon-sized portions. Flatten each ball gently with the back of a fork in a criss-cross pattern, spacing the cookies about ½-inch apart. Sprinkle the tops with the remaining 1½ tablespoons of sugar.
- Bake and cool: Place the pan in the preheated oven and bake for about 15 minutes, until the cookies start to look dry on top. The centers may still feel soft or doughy but will firm up as they cool. Let the cookies cool on the baking sheet for at least 15 minutes before removing.
